Greek salad with feta

Greek salad with all the flavour of summer salad vegetables but with controlled fat. Buy reduced fat feta and measure out the oil carefully.

Ingredients

  • 160g 1 medium red onion, thinly sliced
  • 200g Half cucumber, diced into 2cm pieces
  • 300g Plum tomatoes, diced
  • 30g Black olives, halved
  • 150g Reduced fat feta cheese, roughly crumbled
  • 11g 1 tbsp white wine vinegar
  • 7g 2 tsp extra virgin olive oil
  • 16g 2 tsp clear honey

Method

1. Mix the onion, cucumber and tomatoes together in a large bowl. Stir in the olives and feta.

2. With a fork, whisk the vinegar, oil and honey together and pour over the salad, toss lightly to coat.
