Prawn, Avocado and Brown Rice Salad

A fibre rich salad which combines brown rice, avocado and prawns which is perfect for a packed lunch or picnic.

Ingredients

  • 80g Easy cook brown rice
  • 200g Cooked peeled prawns
  • 140g 1 small ripe Hass avocado, remove skin and stone and dice flesh
  • 4 spring onions, finely sliced
  • 60g 4 cherry tomatoes, cut in half
  • Pinch of dried chilli flakes
  • 1 tbsp fat free salad dressing

Method

1. Cook the rice according to the packet instructions.

2. Once the rice is cooked drain well and allow to cool.

3. Transfer the rice to a serving bowl and stir in the prawns, avocado, spring onions, tomatoes, chilli flakes and dressing

4. Serve at once.
