Beef and spinach with marmalade and rice
Succulent beef and aubergines, cooked in marmalade and coriander served with rice.

1 medium aubergine

Lean minced beef (<12% fat)

Onion, finely chopped

2 cloves garlic

1 heaped tsp ground coriander

Baby spinach leaves, washed

Method
1. Preheat the oven to 200C, fan oven 180C or gas mark 6.
2. Place the aubergine in the oven to cook for 25-30 minutes or until soft.
3. In a non stick pan brown the mince and onion until cooked, stirring frequently.
4. Stir in the garlic, coriander and marmalade, then add the water.
5. Cover and cook gently, stirring occasionally for 15-20 minutes.
6. When the aubergine is tender, remove from the heat, cut in half and scoop the insides into the mince mixture. Break up with a wooden spoon and continue to cook for another 5-6 minutes.
7. Meanwhile cook the rice according to the packet instructions until just tender
8. When the rice is cooked stir the spinach into the mince mixture, and cook for a couple of minutes until it has just wilted.
9. Serve at once with the rice.
