Fruity apple cranberry jelly

Grapes, blueberries and orange set in apple and cranberry jelly infused with green tea.

Ingredients

  • 300ml Unsweetened apple juice
  • 12g Sachet gelatine
  • 300ml No added sugar cranberry juice
  • 200g 1 large orange, segmented
  • 100g Blueberries
  • 100g Small red seedless grapes
  • 1 green tea bag with ginseng

Method

1. Place the apple juice in a small pan with the green tea bag. Bring to the boil. Remove from the heat and allow to infuse for 1-2 minutes. Remove the tea bag.

2. Sprinkle over the gelatine and stir until dissolved. Stir in the cranberry juice.

3. Mix the fruit together and place in a 1kg loaf tin. Pour over the jelly and allow to set for 3-4 hours in the fridge.

4. Dip the tin in a bowl of hot water for a few seconds and upturn the jelly onto a plate, cut into slices and serve.
