Chicken broth with rice & sweetcorn

A simple wholesome soup with vegetables and rice which provides vitamins and calories without much fat.

Ingredients

  • 8ml 2 tsp olive oil
  • 270g 1 large onion, chopped
  • 200g 2 medium carrots, diced
  • 170g 3 sticks celery, sliced
  • 75g Long grain rice
  • 200g Can no added salt or sugar sweetcorn, drained (165g drained weight)
  • 1 tsp dried mixed herbs
  • 1.2l Chicken stock (1½ stock cubes)
  • 200g Roasted skinless chicken breasts, shredded

Method

1. Heat the oil in a large non stick saucepan and fry the onion, carrot and celery for 5 minutes.

2. Add the remaining ingredients and bring to the boil.

3. Simmer, covered for 15 minutes until the rice is cooked and the vegetables are tender.

4. Serve with a sprinkling of parsley
